Recipe Makeover

I'm teaching a cooking class tonight and am going through recipe makeovers...Here's a good one:

Artichoke Dip

Heavy mayonnaise and cheese base.

14 oz. can of artichokes (packed in water)
1 cup of freshly grated Parmesan cheese
1/2 cup of mayonnaise
Salt and pepper

Lowfat Artichoke Dip
Much more of a vegetable base.

14oz can artichoke hearts, drained and chopped
3 Tbsp diced red bell pepper
1 Tbsp lowfat mayonnaise
2 tsp parmesan cheese
1 tsp lemon juice
ΒΌ tsp dried whole dillweed
1/8 tsp garlic powder
1/8 tsp Tabasco
