Going Green....and Red and Orange.
This salad makes eating more colorful veggies as easy as 1,2, 3.
Cabbage and Carrot Slaw
4 servings
1 cup coarsely shredded, peeled carrots
1 cup coarsely shredded cabbage
1/2 cup chopped red pepper
2 scallions, minced
Dressing
1 Tbsp rice vinegar
2 tsp sesame oil
1 tsp lime juice
1 tsp honey
1 tsp light soy sauce
Garnish
1 Tbsp toasted sesame seeds
1. In a serving bowl, combine the carrots, cabbage, red pepper and scallions.
2. Whisk together the dressing ingredients. Pour over the salad.
3. Garnish with sesame seeds. Let the salad stand at room temperature for 20 minutes prior to serving.
